В работе обосновано в качестве основного сырья для разработки новых видов кисломолочных продуктов использование плодовых дикорастущих растений Дальнего Востока: шиповника Даурского и шиповника морщинистого. Биологически активные вещества плодов этих растений позволяют использовать их в технологии кисломолочных продуктов в качестве экстрактов: выбранное сырье содержит значительные концентрации витамина С. Авторами установлено, что наибольшая концентрация определена в шиповнике Даурском – до 1100 мг в 100 г, которая оказалась достаточной для удовлетворения суточной нормы.
